When Luigi came to Texas during the days of the cattle drives, he had a hard time finding work since he couldn't ride a horse. They hired him to be the cook. On his first night the cowboys demanded he make chili. All Luigi knew how to make was marinara sauce for spaghetti. He knew the cowboys wouldn't settle for that. He decided to make his sauce but also kick it up a bit. Luigi wasn't able to fool them. The cowboys knew it wasn't chili but they still ate it up. The next night one of the cowboy's shouted out to Luigi, "make us s'more that Texas S'getti." From that day on, Texas S'getti became a favorite on the cattle drives.

Serving Suggestion: Add one jar of sauce to one pound of lean browned, unseasoned ground beef. Bring to a simmer and serve over pasta. This mixture can also be used in lasagnas or other traditional Italian dishes. The sauce itself is fabulous when used as a pizza sauce.
