This marinade is a blend of fresh scotch bonnet (habañero) peppers, onion, garlic and other herbs and spices. As a marinade, it tenderizes and preserves meat, fish or fowl.

It can also be used like any other seasoning to enhance the flavor of sauces, chili, stews or soups. It adds a wonderful flavor to brisket, steaks, shrimp, chicken, ribs and hamburgers.
