It all started back about 10 - 11 years ago. At the fire station I would play around with different recipes when it was my turn to make the salsa for lunch or dinner. Now keep in mind most firemen are connoisseurs of food and even if they are not they are very opinionated. So through the early years of trial and error and many opinions from my fellow firefighters, I was able to narrow my recipe down. I then started making my salsa for family and then friends, especially during get together's. It was a big hit. I started to get request for my salsa from a lot of different people, even people I didn't know. My wife and I always joked around about the need to bottle up the salsa but just kinda laughed and played it off.
Then the holidays approached and we were bombarded with request for salsa. It was a big hit at a lot of family gatherings and Christmas parties. It was at that point we decided to take a leap toward marketing salsa, not just any salsa, our salsa. Even though around family and friends the salsa was completely gone in one sitting, a little tweaking was involved to come up with a desired shelf life. We tested many competitors jarred salsa and was very disappointed with many of them. Too strong in vinegar, too much onion, not enough garlic, some just plain bad.
After a month of jarring and testing (no animals were harmed, majority of testing was done on those opinionated firemen I work with.) the finished product was way more than we could have ever expected. We were able to take our original recipe and tweak it to the point of coming up with a well blended smooth flavored salsa that doesn't give you the willy chillies when you take that first bite.
